So,recently, I decided to take my [speed:1] champion wrestlers and give them short swords and give them something to else to learn. So, dressed in full plate armor, with a short sword, they've been walking around all day tired.
I'm wondering if this will eventually wear off.

The more armour-user skill they gain, the easier they will be able to go around in full armour. Have them spar a bit.
Also, the stronger they are the more they can carry before becoming encumbered.
If you want them to get a bit of armour-user skill before you put them back in the plate-mail which makes them tired, you may want to try full leather armour and other things. Metal is a lott heavier.

yeah they get a lot faster in time. i think my champions are all faster then my regular dwarves.

How do you get my soldiers to spar? Do I have to build an armory? or do you make them spar using the Archery Target?

You must have a barracks, which can be accomplished by placing an armour stand or weapon rack and making the surrounding area into a barracks.
Or a bed, and switching the barracks option to "Y"

Also check what's in his hands. I switched my first legendary wrestler over to axe use, and he spent two years off duty as a novice. Then I realized that he was carrying his axe in his right hand AND a buckler in his right hand. So he wasn't getting an use out of either. I made him drop everything, and now he's doing fine. Since then I've tried to be very careful in watching what my soldiers are carrying.
